An ambitious renovation plan for the historic Three Gables in Bradford upon Avon in the Cotswolds came to fruition thanks to the painstaking work of owners Beverley and Howard Booty and a helping hand from Space.  The couple had tackled a number of restoration projects over the years but nothing on this scale; the grade II listed building lad lain empty for over 23 years and became such a labour of love, the Bootys decided not to sell it on but convert it into a fine dining venue oozing with character and high quality finishes.  They worked with Space to realise that vision, creating a top-notch professional kitchen tucked inside the tiny interior where the six strong brigade cooks over seventy covers every day.  Now a Falcon solid top range sits at its heart, with clever refrigerated Adande drawers and energy-saving Winterhalter dishwashing, under bespoke extraction systems to keep everything fresh and cool. The eatery beyond is furnished with bespoke and off the peg seating, polished to Beverley’s specific requirements, to work in harmony with the scheme.  The result is a beautiful restaurant serving exquisite food that’s booked solid.
